just eggs

I have to admit how excited I was when I came across this article about eggs. As a college student, eggs are one of the easiest, cheapest and healthiest meals to prepare. There are so many different ways you can prepare an egg. Not to mention its a great source of protein, and almost no calories when just eating egg whites. And did you know eggs are the only food that contain natural vitamin D?! Not to mention they’re also a good source of vitamins B12, A and E.

ImageI’m always playing a guessing game when it comes time to decide how long eggs last. Apparently they last at LEAST three weeks after the printed carton date when refrigerated! Another fun fact: drop an egg in a cup of water, if it sinks it’s still good! If it floats to the top, toss it.

When boiling eggs, remove them from the pot and place them in cold water to preserve that perfect boil (rather than letting them overcook in the pot.)
